Buckwheat is a non-GMO and naturally gluten-free ancient grain. Despite its name it is not related to wheat, but rather is a type of pseudocereal. It can be eaten raw or cooked and works well as a substitute for pasta, rice or other cereal grains. As a source of plant-based protein, it is a good addition to vegan and vegetarian diets.
